As children, we were lucky to grow up with a Mum who could turn the most modest ingredients into something comforting and delicious. A thrifty, imaginative home cook with most of her repertoire from Delia Smith and great with batch cooking and using up leftovers.
My Mum’s made this at home forever. It’s quick, filling (full of fibre and protein), a great filling lunch and needs to be topped with plenty of parmesan and your best olive oil. Plus it freezes like a dream which is a very important priority for me as I always want/prefer/crave home cooked food but don’t always have time to make it.
It’s in essence a much simplified Italian bean soup but cooks in 25% of the time. There’s a couple of tricks that really build flavour: don’t leave out the pinches of sugar and booze.
